Tgsit Boru is the name of the owner of a 2.8-hectare coffee plantation located at over 1700 meters above sea level in Ethiopia, in the Yirgacheffe region, specifically in Kochere. This region is known for its very delicate coffees. Before drying on African beds, Tgsit allows her coffee to ferment for 36 hours before the classic ‘washed’ processing. This process produces a very floral aromatic profile specific to this region of Ethiopia, with notes of dried apricot and caramel, delicate acidity and a smooth, silky body. The balance of flavours is of a rare delicacy for a washed Ethiopian coffee, as the basic flavours and texture of this coffee are so well balanced.
