Raised in a coffee-farming family, William has spent more than 20 years cultivating his 10 hectares between 1,450 and 1,650 metres, where coffee grows alongside plantain, cassava, maize and beans, with organic fertilisers to protect the soil. Passionate about post-harvest processing, he put this lot of the rare Caturron variety through a 120-hour anaerobic fermentation, followed by 12 hours of oxidation, before drying it as a natural on patios for 15 days. Our medium roast reveals notes of ripe grape, papaya and brown spice, with a complex acidity.
