“El Diamente”
This experimental coffee has gone through an anaerobic maturing process before being sun dried. This technique makes it possible to obtain exceptional aromas. The process consists in fermenting the beans, with their mucilage or some possibly of the cherries’ juice, in hermetic containers. This Anaerobic environment (absence of oxygen) allows a development of exceptional unique aromas of cinnamon, orange, cocoa and brown sugar.
